The short version
It started with
a pull towards fire.
Henry’s is the meeting point between the Southern United States and Northern England — a family-run smokehouse where heritage, hospitality and an obsession with the real craft of barbecue all sit at the same table.
Lee came from a life of restaurants & in kitchens. The Texas–Louisiana part came later. His grandfather, Earl, had been a US Army veteran and then a sheriff on that border. Finding him & understanding his passing didn’t invent the obsession with real smoke. It explained it. Why the long cooks felt like service. Why barbecue, of all the food Lee had cooked, was the one that put people back around a table. Henry’s is that story on a Lancashire door — named for Lee’s son, pointing back to Earl, cooked on two real offsets in Greenhalgh.
Barbecue is the excuse. Bringing people back around the table is the reason.

The road
to Henry’s.
Not a neat overnight success story. A life in kitchens, a pull towards the South, service to others, family joy and family loss — all of it led here.
- Early 2000s
The spark from across the Atlantic.
Lee’s fascination with true barbecue grew through the food and travel storytelling of Anthony Bourdain. It was the start of a much bigger pull towards the people, pits and traditions of the American South.
- Around 2012
A hobby becomes an obsession.
While building a career across UK kitchens and restaurants, Lee began learning barbecue the slow way: fire control, real wood, patient cooks and plenty of hard-earned lessons.
- 2019
Happiness through service.
The family’s work feeding people in need in Manchester, including homeless veterans, formed part of a journey recognised with The Queen’s Award for Voluntary Service. That belief in looking after people still sits at the heart of Henry’s.
- The build
An empty shell gets a name.
The family took on a building near the M55 and turned it into the roadhouse they had imagined. They named it after their son Henry.
- Early 2025
The “why” gets deeper.
A family loss made the work more personal: notice the empty chairs, gather while you can.
- 2026
Lancashire to Lockhart.
Lee travelled to Austin and Lockhart, learning from the barbecue culture at its source, spending time with pitmasters and bringing fresh fire, ideas and conviction home to Lancashire.

Still doing it the hard way.
Two real offset smokers — Bad Barry and Little Larry — over hardwood. Twelve to eighteen hours through Lancashire weather. The point is not that it is easy. The point is that it tastes like somebody cared
The name above the door
Named for Henry.
Built for everybody.
Henry is Lee’s son. Putting his name on the smokehouse made the promise personal: a place generous enough for families, friends and strangers.
That is why the plate is generous, the welcome is warm and the table matters just as much as the smoker.

Henry’s cooks on real offset smokers over a changing blend of hardwoods. The pit needs attention, weather has opinions and the clock refuses to be hurried. That is exactly the point.
We’re lucky being one of very few smokehouses in the UK to be able to use real offset smokers with real logs.
